Sliced vs. Sticks: What’s the Difference? While our sliced biltong is cut from a large steak after drying (often leaving a soft, moist centre), our Biltong Sticks are cut into thin strips before drying.

Local Ingredients, Traditional Method We start with lean New Zealand grass-fed beef. We trim away most of the fat to ensure a consistent dry cure. The strips are marinated in vinegar and dusted with toasted coriander seeds, cracked black pepper, and coarse salt before hanging in our Hauraki drying room.
