The Village Butcher Process Our process begins with the beef itself. We source only premium New Zealand grass-fed beef, selected specifically for its lean texture and depth of flavour. We slice the silverside thick to ensure the final product retains a satisfying chew—never brittle, never too soft.
Once sliced, the meat is marinated in a traditional blend of malt vinegar and our secret mix of spices. We use roasted coriander seeds, cracked black pepper, and coarse sea salt to cure the meat. Unlike beef jerky, which is often cooked at low heat or smoked, our beef biltong is slowly air-dried in our controlled curing room. This slow drying process allows the meat to naturally ripen, intensifying the beefy flavour while locking in nutrients.
