Authentic Droëwors: The Perfect Snacking Sausage
If you are a fan of cured meats but prefer a different texture to traditional biltong, our Droëwors is the answer. Literally translating to “dry sausage,” this South African classic has found a second home here in New Zealand, and at The Village Butcher, we make it the traditional way.
How We Make It Unlike biltong, which is sliced from a whole steak, Droëwors starts with premium mince. We use high quality meat, ensuring a robust and natural flavour profile.
The mince is seasoned with a time-honoured blend of spices—typically featuring toasted coriander, cloves, and nutmeg—which gives it a slightly more aromatic and savoury taste compared to biltong. We then stuff this seasoned mix into natural sheep casings. These thin casings are crucial; they allow the sausage to air-dry evenly and provide that distinctive “snap” when you bite into it.
Why Choose Droëwors? Many of our customers in Hauraki and Takapuna love Droëwors for its convenience and texture.
-
Easier to Eat: Because it is made from mince, it is generally softer and easier to chew than whole-muscle biltong, making it a hit with kids and adults alike.
-
Aromatic Flavour: The grinding process allows the spices to permeate every bite, delivering a consistent burst of coriander and pepper notes.
-
Ready to Go: No slicing required. It’s the ultimate grab-and-go food.
A High-Protein Super-Snack
Just like our other cured meats, our Droëwors is a fantastic nutritional option. It is free from the sugars and preservatives found in processed supermarket snacks.
-
Keto & Carnivore: High fat and high protein make it perfect for low-carb diets.
-
Adventure Food: Because it is dried and cured, it doesn’t require refrigeration. Pack it in your backpack for a hike, take it on the boat, or keep a stash in the glovebox for road trips.
Serving Suggestions While it rarely makes it past the car ride home, Droëwors is a sophisticated addition to a grazing table. Cut it into bite-sized chunks and serve alongside pickles, sharp cheddar, and walnuts. The aromatic spices pair wonderfully with a glass of Pinotage or a bold Cabernet Sauvignon.
